Scrambled Eggs with Onion and Tomato

2 free range eggs
¼ onion, chopped
6 Rosa tomatoes
50ml milk
Salt and pepper
1 knob butter

Directions

Melt the butter in a pot
Add the onion and fry till golden
Add the tomatoes and cook till soft or brown
Add the eggs and milk and stir
Stir occasionally till cooked and fluffy
Serve hot

90ml Low Fat Yoghurt with 5 strawberries

Mussels with Wild Garlic

2kgs mussels, cleaned 1
90ml tablespoon olive oil
6 Wild garlic leaves, chopped
Juice of ½ lemon and zest

Directions

Put the oil in a pot over high heat
Add the mussels and cover with the lid
for 3 minutes
Then stir the mussels to distribute the heat
Add the garlic and lemon and replace the lid
Allow to cook for 5 minutes till the shells have opened
Spoon the mussels into a bowl and distribute the liquid evenly
Top with wild garlic flowers and serve

50g cottage cheese with 4 Cucumber sticks

Balsamic-Glazed Fillet and Roasted Vegetables

4 Lean beef tenderloin steaks
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Olive Oil
2 teaspoons ginger & garlic
1/2 teaspoon crushed red pepper
2 tablespoons low-sodium soy sauce
1 tablespoon balsamic vinegar

Directions

Fillet
Sprinkle both sides of steaks evenly with salt and black pepper
Heat a large nonstick skillet over medium-high heat
Coat pan with cooking spray
Add steaks to pan; cook 3 minutes on each side or until desired
degree of doneness
Remove steaks from pan – keep warm

Balsamic Glaze

Add garlic and red pepper to pan – sauté for 30 seconds
Add soy sauce and remaining ingredients; bring to a boil,
stirring occasionally
Reduce heat and cook for 1 minute
Serve with steaks

Roast veggies

2 parsnips, peeled and quartered
1 red onion, quartered
8 mushrooms, quartered
5 marrows, quartered
6 patty pans, quartered
1 clove garlic clove, smashed
2 tablespoons olive oil

Add the ingredients in a roasting pan and roast till cooked through

NOTE: Cucumbers are a great source of B-Vitamins and Carbohydrates
A sensible snack which provides that boost
when you reach that afternoon energy slump
Cucumbers are also known to help curb hunger
